Crockpot Chicken Stew Cook

I need a recipe idea. I cooked chicken breasts in a crockpot with coconut milk.?
Now I have a really delicious broth left and keep using it. I think a certain type of stew to use something like ginger and lemongrass, but not sure what vegetables would be good to add. Any ideas? I'm not a big fan of rice. I think like a soup or stew.
I think the root vegetables would go well with the sweetness of coconut milk (carrots, parsnips, turnips bitterness may a good counterbalance, rutabaga). You'll need a little acid: lemon juice or lime juice or maybe a little pineapple. Ginger is a good idea, but keep the light. Perhaps a hint of cardamom, if you have any. Onions always go (Maybe use the button whole onions). You might consider adding of mashed potatoes to thicken the liquid.
