Vegetarian Vegetable soup or stew crock pot recipe?
I want to make a tasty soup or stew with pieces that I at hand and I can not find a recipe that uses vegetable broth instead of water. I vegetable broth, potatoes, carrots, corn, diced tomatoes and tomato paste. I also have many herbs. Does anyone have an easy recipe soup crockpot stew / or using any an ingredient that I?
Virtually all the recipes that calls for meat broth based vegetable broth can be replaced without changing the taste of all of the soup or stew. One of my favorite vegetarian / vegan recipes includes almost all vegetables "Typically" kept in a house with the addition of beans for protein. "Vegetable Festival" medium 1 onion, chopped 4 large carrots, cut into 1 / 2 "pieces 3 stalks celery, cut into 1" chunks 4 large potatoes cut into bite-size bits (you can leave the skin for fiber content) 1 cup frozen peas 1 cup frozen corn 1 cup frozen green beans 1 large can stewed or diced tomatoes, with liquid 1 can (15.5 ounces) 1Can beans (15.5 ounces) white beans 2-3 tablespoons olive oil 3 to 4 liters of vegetable broth 2 tablespoons Coffee chopped garlic 2 bay leaves 1 / 2 teaspoon black pepper 1 1 teaspoon oregano basil v. Tea / 2 teaspoon coffee 2 tablespoons cumin 1 tablespoon cornstarch (if making a stew) Set the crockpot on HIGH and add the olive oil. Add onions, celery and carrots and toss to coat with oil. The goal here is to brown the vegetables slightly, to give a little flavor depth. Once the vegetables are golden Reduce heat to medium and add half the broth. Add bay leaves and other spices. May seem very strong tasting now, but that will change a bit. Cover the pot and allow vegetables to cook until they begin to drift apart. Once the vegetables are tender add the remaining vegetables, broth and beans. Bake for about 1 hour over low heat. If you want make this stew, reserve 1 / 2 cup of the broth and mix with cornstarch to make a slurry. The broth must be cold if you do not get lumps. Pour this mixture into the saucepan and stir. The broth begins to thicken as it boils. I like to serve this with a salad and a cookie Nice for a complete meal. Remember to change the spices to your taste and be creative. Enjoy!
